This makes me think of a story from, I believe, a skeleton crew collection of Stephen King short stories called survivor type, where a doctor finds himself stranded alone on a desert island and has his medical bag and anesthesia and systematically, methodically anesthetize his different parts of his body and, you know, cuts them off and eats them until he has no limbs left.
